Grape Varieties by Appellation - AOP Côtes de Provence

Below are grape varieties that conform to AOP Côtes de Provence classification. Varieties identified in black are red (also called “black”) grapes and those in green are white grapes.

The proportion by grape variety (specified below) refers to the percentage of the total area of the vineyard that must to be planted with a specific variety (referred to as encépagement). Some AOP/AOC regulations will also specify a proportion of the blend (referred to as assemblage) for a given color of wine in order to be classified as an AOP/AOC wine.

At least 2 of the principal varietals must be used and no individual principal varietal can be greater that 90 % of the total.The proportion of the combined blend of secondary varietals must be less than or equal to 10 % of the total.The proportion of Clairette, Sémillon, Ugni Blanc and Vermentino must less than or equal to 20 % of the total. The red and rosé wines are made from a blend of grapes, wines in the process of fermentation, or wine made from at least two varieties specified in the encépagement where at least one must be a principal variety. The proportion of all principal varieties must be greater than or equal to 50% of the overall blend. The exception is wine made from white grapes that are vinified separately.

For red wines, the proportion of Cabernet Sauvignon must be less than or equal to 10 % of the total. The proportion of the total of the varietals of Clairette, Sémillon, Ugni Blanc must be less than or equal to 10 % of the total. The proportion of the Clairette, Sémillon, Ugni Blanc et Vermentino must be less than or equal 20 % of the total.

Red	Grenache, Mourvèdre, Syrah		The proportion of each of the varietals must be less than or equal to 60 % of the total. The blend requirements for wine from Fréjus must include a minimum proportion of 50% to be from the Syrah grape variety in the form of percentage of grapes or wine in the process of fermentation.
Rosé	Grenache, Mourvèdre, Syrah, Tibouren	Cinsaut	The proportion of the principal varietals must be greater than or equal to 80 % of the total. At least 2 of the principal varietals must be planted and no individual principal varietal can be greater that 60 % of the total. The rosés from Fréjus must have a blend that includes a minimum proportion of 70% of grapes, wines in process of fermentation, or wine made from principal grape varieties where the minimum proportion of 50%, together or seperatley, is to be come from Grenache and Tibouren.

At least 2 of the principal varietals must be planted and no individual principal varietal can be greater that 60 % of the total. The proportion of the varietals Grenache and Syrah, individually or combined, must be greater than or equal to 50 % of the total. The proportion of the varietal Cabernet Sauvignon must be greater than or equal to 20 % of the total.

The proportion of the varietal of Clairette, Sémillon, Ugni Blanc and Vermentino must be less than or equal to 20 % of the total.
